Peach-Strawberry-Rainier Cherry Crumble
This was so simple and delicious, guys! I’m going to give you the recipe for exactly what I did, but my best advice is just to eyeball it as far as the amount of fruit you use, and of course most fruits will work really well with this recipe, just depending on what you have handy!!
4 large peaches, pitted, skinned & sliced
10-15 strawberries, stemmed and sliced
10-20 Rainier cherries, pitted & sliced in half
1 stick softened butter
1 cup sugar
1 cup flour
1/2 tsp sea salt
1 tbsp cinnamon (this is another one I eyeballed, and applied very liberally)
sprinkling of brown sugar, your preference
Heat oven to 375*F
Spread all fruit out evenly in the bottom of a buttered 8x11.5 glass pan. Sprinkle brown sugar generously over the top.
Combine flour, sugar, salt and cinnamon in a mixing bowl and cut in softened butter stick with pastry blender or you can use two knives and then knead by hand until it reaches a cornmeal-like texture.
Sprinkle flour mixture evenly over fruit and bake for 40-50 min, until golden on top.
So easy and delicious! Enjoy!
